Paella is a traditional dish first cooked hundreds of years ago to feed farm laborers in the fields in the Valencia region of Spain. Cooked outdoors over wood fires, it included rabbit, land snails or chicken, beans, vegetables and rice. Since then it has expanded to many regional versions. Spanish tradition tells the cook to focus on one type of protein either red meat, poultry or seafood, but we prefer a Paella Mixta, which combines all three and provides a great combination of flavors for the whole family.
