Puyallup Fair’s Best Cake is Announced

 Puyallup, WA – Sept. 18, 2009 – Chocolate makes everything taste better as proven by the winning cake in the “Special Best Cake Award” contest, held in the Home Arts Department at the Puyallup Fair, which runs through Sept. 27.

 Mary Glaze of Auburn baked the most outstanding cake in the contest, “Chocolate Zucchini Cake,” and took home the grand prize of $100 and a champion rosette. Elizabeth Knighton of Seattle took home $50 and a ribbon for her “Lemon-Lime Pound Cake.” Third place honors and $25 went to Diane Zook of Gig Harbor for her “Tangelo Angel Food Cake.”  The winning recipe is as follows:

“Chocolate Zucchini Cake”
 Mary Glaze, Auburn

Cake Ingredients:
2 cups flour
2 cups sugar
¾ cup cocoa powder
2 tsp. baking soda
1 tsp. baking powder
½ tsp. salt
1 tsp. cinnamon
4 eggs
1 ½ cups oil
3 cups zucchini

Frosting Ingredients:
½ cup melted butter
2/3 cup cocoa powder
3 cups powdered sugar
1/3 cup milk
1 tsp. vanilla

Cake Directions:
1. Mix flour, sugar, cocoa powder, baking soda, baking powder, salt, and cinnamon.
2. Mix in eggs and oil.
3. Mix in zucchini.
4. Pour into two round cake pans sprayed with Pam.
5. Bake at 350 degrees for 30 minutes or until toothpick comes clean.
6. Let cake cool.

Frosting Directions:
1. Mix melted butter and cocoa powder.
2. Add sugar, milk, and vanilla.
3. Frost cake.
