The Puyallup Fair Apple Pie Contest Shares a Delicious Recipe

 Puyallup, WA – Sept. 26, 2009 – The Puyallup Fair would not be complete without the Home Arts Dept.’s judging of a symbol of Americana – homemade, fresh-from-the-oven apple pies. Judges have announced the results of the “Puyallup Fair Apple Pie Contest.” The Puyallup Fair runs through Sept. 27.

 The first place rosette and $100 went to Peggy Morris of Edgewood for her “Apple-Maple Crunch Pie.” Second place and $50 went to Susan Schmidt of Lake Tapps for her “Apple Pie Double Crust.” Third place and $25 went to Joe Skidmore of Mountlake Terrace for his “Rose Syrup Apple Pie.” Below is the winning recipe.

“Apple-Maple Crunch Pie”
Peggy Morris, Edgewood

Crust:
1 ¼ cups flour
1 tsp. salt
1/3 cup Mazola corn oil
3 tbsp. milk
¼ cup crushed nuts

Filling:
4 cups Granny Smith apples
½ cup apple juice
1 tsp. lemon juice
¼ tsp. nutmeg
2 tbsp. sugar
2 tbsp. cornstarch
4 tbsp. maple syrup
¼ tsp. cinnamon

Crunchy Topping:
½ cup brown sugar
½ cup flour
1 tsp. cinnamon

1 tbsp. water
½ cup chopped pecans
¼ cup old fashioned oats
5 tbsp. butter

Crust Directions:
1. Mix flour and salt in a small bowl to make a one-crust pie.
2. Add oil and mash with a fork.
3. Add milk until fully mixed together.
4. Roll out on wax paper and put into 8-inch pie pan.
5. Crimp edges.
6. Press crushed nuts into crust bottom.
7. Put foil around the edge and bake at 425 degrees for 10 minutes in the middle of the oven.
8. Let cool.

Filling Directions:
1. Peel, core and cut apples into bite-sized pieces and place in a small saucepan.
2. Add apple juice to coat the apples and cook on medium for 3 minutes.
3. Drain juice away.
4. Add lemon juice and toss apples together.
5. Mix sugar and cornstarch together and coat apples.
6. Add maple syrup and spices and toss gently together. Let rest 10 minutes.
7. Apply the crumb topping.
8. Bake at 350 degrees for 40 minutes on the middle rack and cover with foil, as needed.

Topping Directions:
1. Mix together brown sugar, flour, cinnamon, water, and chopped pecans.
2. Add oats.
3. Cut butter into small pieces and crumble together with fingers. Top pie with filling, working from the center to cover the filling.
