A Flour-Free Delight is Revealed at the Puyallup Fair

Puyallup, WA – Sept. 18, 2009 – This year, judges found the perfect Biscotti recipe to compliment a cup of coffee during the Home Arts Department’s “Dillanos Coffee Biscotti Contest” at the Puyallup Fair, which runs through Sept. 27.

Adrienne Anderson-Smith of Newcastle came in first place with her “Wheat Flour-Free Vanilla Pecan Biscotti” recipe. Coming in second place is Lucille Johnston of Seattle with her “Lavender Lemon Biscotti.” In third place was Phyllis Coolen of Olympia with her “Macadamia Biscotti.” The first place winner took home a cash prize of $100, second place took $50, and third place took $25. All cash prizes were donated by Dillanos Coffee Roasters.

The first place biscotti recipe is as follows:

“Wheat Flour-Free Vanilla Pecan Biscotti”
Adrienne Anderson-Smith, Newcastle

1 cup soy flour
2 cups oat “flour” (oatmeal ground in blender)
¼ tsp. salt
½ tsp. baking soda
1 cup rolled oatmeal
3 large eggs
1 ½ cup dark brown sugar
2 tsp. vanilla extract
2 cups roasted pecans – very coarsely chopped
12 oz. dark or bittersweet chocolate to temper for dipping

1. Combine dry ingredients and set aside.
2. Beat eggs.
3. Thoroughly stir in brown sugar then extract.
4. Add the dry ingredients, a bit at a time, stirring then folding until well blended.
5. Fold the pecans in evenly.
6. Shape the dough into one or two (depending on the length of slice you desire) “log(s)” on a
    large prepared cookie sheet.
7. Bake at 325 degrees for about 40 minutes, until completely risen in the center and lightly
    browned.
8. Remove the pan from the oven, turning the temperature down to 150 degrees.
9. Immediately and gently remove the “loaf” from the sheet and parchment and set on a cutting
    board, then cut into ¾ to 1 inch slices.
10. Place them on a rack leaving a little air space between them; rest them on the cookie sheet
    and put them back into the oven. Turn if off.
11. Let them dry overnight or to preferred firmness.
12. Dip in tempered chocolate if desired. Cool on waxed paper.
